Herbed Quinoa With Pine Nuts


Today has been a terrific Tuesday! Quite productive, active and healthy – woot woot ^_^

For the first time I prepared a Quinoa dish at home. Like I’ve said in my previous posts, I look at cooking more like an art. I don’t like following recipes word for word. I like experimenting and adding my own artistic touch 😉

Following is the recipe – ingredients I used and the method I followed. You can always tweak it as per your liking and/or dietary restrictions.

Quinoa with Pine Nuts (serves 4/5):

Ingredients:

  1. 1 cup Quinoa
  2. 1/2 cup cauliflower florets
  3. 1/2 cup broccoli florets
  4. 2 cups vegetable broth (or water)
  5. 3 stems of green (spring) onions – chopped
  6. 3 cloves of garlic – chopped
  7. 1 green chilli – finely chopped
  8. 1/2 cup pine nuts – lightly toasted
  9. 2 to 3 Tbsp of basil, cilantro and parsley
  10. 1 Tbsp extra virgin olive oil (EVOO)
  11. Soy sauce to taste
  12. Salt and pepper to taste

Method:

  1. Rinse quinoa well, spread it out on a kitchen cloth or paper towel to dry it. To get a delicious roasted flavor, toast the grain in a skillet before cooking.
  2. Place quinoa and the florets in a saucepan, add water, cover and bring to a boil
  3. Add soy sauce, cover and reduce the flame to low
  4. On the side, saute in a 1 tsp of olive oil, the garlic and green onions slightly
  5. Simmer until all liquid has been absorbed and all the quinoa has opened up (approximately 15 minutes)
  6. Gently add the rest of the ingredients
  7. Season to taste
  8. Serve immediately
